Zero Carb High Protein Oatmeal Pancakes Recipe

 

Follow the make ahead directions to get a head start on a super healthy protein breakfast with this buckwheat pancake recipe.
Zero Carb Buckwheat Pancakes

  • 1/8 cup of buckwheat pancake mix
  • 1/3 cup whole (old fashioned) oatmeal (do not use pre-cooked or "quick" oatmeal)
  • 4 XL egg whites
  • 1/4 cup low fat cottage cheese
  • 1/2 scoop Zero Carb Vanilla Protein
  • 1 TBSP chopped pecans
  • 1-2 Teaspoon vanilla extract
  • 1/2 Teaspoon olive oil
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg 
  • 1-2 packets(s) of Splenda®

Never tried this recipe but probably very taste but not "Zero Carb" even though it uses "Zero CARB protein" for real zero carb pancakes try this. 
 
 
 
6 XL egg whites 
 
1 Scoop of vanilla whey 
 
1-2 tsp vanilla extract 
 
1 tsp - 1 TBSP of Psyllium Husk (depending on thickness you desire) 
 
1-4 TBSP of splenda 
 
1 - tsp cinnamon 
 
 
 
even then expect 1-6 grams of carbs from the protein and 5-15 grams of carbs from psyllium husk (mostly dietary fiber so no impact on blood glucose levels) 
 
 
 
and if you want added fat you could sub 2 wholes eggs for 2 off the whites or add flax meal, almond meal, or walnut meal. And for an orange flavor use metamucil orange sugar free instead of plain psyllium husk.
