Tired of the usual protein pancakes which generally taste like cardboard and have a strange foam like texture to them? Well if you are you need to give this recipe a try! It’s not your usual “grind oatmeal into a powder and add egg whites” protein pancake recipe, these actually come out fluffy like true pancakes should and taste great while packing nearly 30 grams of high quality protein!
Ingredients:
(Makes 4 servings)

1 cup Bob’s Redmill Low Carb Baking Mix

2.5 scoops VPX Zero Carb SRO Serious Chocolate protein powder

½ teaspoon baking soda

1 tablespoon sugar free chocolate chips

2 large eggs
-
½ a teaspoon vanilla extract

1 cup unsweetened almond milk

1 tablespoon VPX Thin Fat
Directions:

In a large mixing bowl combine all dry ingredients and mix.

Add in all wet ingredients and mix using a wire whisk.

Heat a medium sized skillet over medium heat and spray with cooking spray.

Pour ¼ of the batter into the heated skillet and turn when bubbles begin to form.

Add any topping you wish and enjoy! I recommend just simple whipped cream on top!
