Sometimes you feel like some Latin food but you just can't fit all of the calories that traditional Latin food has into your diet. I've been there, trying to figure out how I can get the flavor but without all the fat from various oils and all the carbs from sauces. With this spicy and sweet low calorie molé sauce you can get your Latin fix while keeping calories in line with your diet, as an added bonus the sauce adds some high quality protein to your meal!
Ingredients:
-
1 scoop VPX Zero Carb SRO Chocolate protein
-
1.5 Tablespoons Unsweetened Cocoa Powder
-
¼ Teaspoon Garlic Powder
-
¼ Teaspoon Onion Powder
-
¼ Teaspoon Chili Powder
-
¼ Teaspoon Salt
-
¼ Teaspoon Parsley
-
¼ Teaspoon Basil
-
1/8 Teaspoon Cumin
-
1/8 Teaspoon Cayenne Powder
-
¼ Cup Water
-
1 Teaspoon Tomato Paste
-
4, 4oz Boneless Skinless Chicken Breasts
Instructions:
-
Stir to mix all dry ingredients in a medium sized mixing bowl.
-
Add water and stir until a sauce forms (it will be a little runny).
-
Add in tomato paste and stir until sauce thickens slightly.
-
Place chicken breasts and 2/3 of sauce in a ziplock bag and let it marinade for at least 20 minutes in the refrigerator.
-
While chicken is marinating pre-heat oven to 400 degrees.
-
Place marinated chicken breasts onto a baking sheet and pour remaining sauce over top (I actually used a brush to baste it on).
-
Cook chicken breasts for 20-25 minutes or until chicken is cooked through.
-
Once cooked, let the chicken breasts sit for 5 minutes to cool and soak up the sauce before serving.
