VPX Funfetti Protein Cupcakes | Recipe

Whether you hit a new PR in the gym, prepped your meals for the entire week, or even did something as simple as waking up in the morning, there is ALWAYS something is worth celebrating.funfetti protein cupcakes 01 So what better way to celebrate than with cupcakes?! Unfortunately, cupcakes may not exactly line up with your strict diet and training protocols - UNTIL NOW! Check out this awesome recipe from our friend Mike Metzger (@Muscle_Chef on Instagram). With only 150 calories and over 12g of Protein per cupcake, this is a tasty treat without the cheat!


Cupcake Batter

- 2 scoops VPX Vanilla Syngex Protein
- 1/3 Cup Almond Meal/Flour
- 2/3 Cup Oat Flour
- 1/4 Cup Granulated Stevia
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 1 Yoplait 100 Calorie vanilla yogurt
- 1/2 tsp vanilla extract
- 1 egg
- 8 Tbsp unsweetened applesauce
- 1/4 cup almond milk
- 2 Tbsp Sprinkles


- 6 Tbsp fat-free cream cheese
- 1 scoop VPX Vanilla Syngex Protein
- 1 package White Chocolate Sugar Free/Fat Free Pudding Mix
- 5 drops Vanilla Stevia
- 1/3 cup Almond Milk
- 1 Tbsp Sprinkles



- Pre-heat oven to 350 degrees
- Combine all dry ingredients in a mixing bowl and sift together thoroughly
- Combine wet ingredients with the dry ingredients in the mixing bowl
- Use a hand electric mixer, mix ingredients on low speed
- Once all ingredients are mixed fold 3 Tbsp of Sprinkles into the mixture
- Place baking cups into a muffin pan
- Pour mixture into each individual baking cup
- Place muffin pan into pre-heated oven and bake for 20 minutes
- After 20 minutes pull cupcakes out of the oven and insert a toothpick down the center of one of the cupcakes to see if they are done, if the toothpick comes out clean the cupcakes are ready. Let the cupcakes cool as you prepare the frosting.

White Chocolate Cream Cheese Frosting

- Combine all ingredients in a mixing bowl with an electric hand mixer.
- The consistency should be thick like cream cheese
- Once Frosting is mixed spread over the cupcakes with knife
- Optional step: Add Sprinkles on top of the cupcakes

Cooking Time: 20 minutes
Total Time: 50 minutes
